Cooking is in Adam Byatt’s blood. Not only was his grandfather a cook in the army, but his mother is also a professional chef, so from an early age he was immersed in the world of the kitchen. It was almost inevitable that Adam would become a chef himself in fact, just two days after his 16th birthday he began an apprenticeship at Claridge’s. At the same time, he started training with the Academy of Culinary Arts, splitting his time between the course and the hotel before qualifying as a professional chef at age 21. After a brief stint at The Berkeley, Adam joined Phil Howard’s lauded Mayfair restaurant, The Square. He was the sous chef when the restaurant was awarded its second Michelin star.
